Thanksgiving and the Day After

Did you know that 88% of Americans choose to eat turkey on Thanksgiving? Here are a few more turkey facts to amuse your guests.
A 3 oz serving of roasted turkey, no skin, contains 24.6 grams of protein and only 4.2 grams of fat (1.5 grams saturated fat.)
Turkeys are a New World bird and may have been independently domesticated twice, first in Mexico, from at least 800 BC and again in the American Southwest around 200 AD

Fry’s, Sprouts and Safeway are using last week’s ad prices through Thursday Nov. 22. Fry’s has a very few items on specials from Friday Nov. 23 through Tuesday Nov.  27. Sprouts and Safeway will not be publishing any new specials until Wed. Nov 28. According to a manager at Sprouts, “Our overall sales for those days are so low that there is no point in special sales.”

On Thursday, Thanksgiving, the following hours will apply:
Fry’s, 5 AM- 5PM
Safeway, 5 AM - 5 PM
Sprouts, 7 AM - 4 PM
Walmart will be open all day, with Black Friday sales starting at 6 PM.

This week we are concentrating on getting the most out of the foods purchased for Thanksgiving. As it is unclear in most cases exactly what the prices will be on Friday through Tuesday, we urge you to use as much of what you already have as you can. Many things can, of course, be frozen for later use. Be sure to watch for Manager’s Specials and other sales when you are in the markets. Fresh Turkeys may be on sale.

Triple Ginger Cookies

Recipe: Winter Fruit Compote

3 cups dried fruit, cut up. Apricots, Flame Raisins, Pineapple, Lemons, peaches, currents, whatever you have/like
Brandy and Apple Juice to cover
2 apples, peeled, cored and diced about 3/4 inch
1 pear, unpeeled, cored and diced about 3/4 inch
Spices, either whole in a cheesecloth bag or ground

Step 1. Place cut up fruits in a heavy saucepan, add Brandy and Apple Juice. Stir well, bring to a boil, stir again. Let cool, stirring from time to time. Place in refrigerator overnight or until ready to proceed.
Step 2. Heat on low until fully warmed. Add spices. If using ground spices, mix with a little warmed juice and stir well, this will keep clumps from forming. Add additional liquid, brandy and/or apple juice to just cover, or nearly cover, bring to a gentle simmer, add spice mixture and cut up apples and pear. Cover and let simmer until apples are soft. Remove from heat. Serve warm or at room temperature.

Caramelized Cranberry Sauce
You really need a good heavy pan for this.

Crock Pot Mashed Potatoes

Pumpkin Pudding (Easy Peasy)
All the flavor, half the calories and fat.

Just follow the recipe for pumpkin pie on
the pumpkin puree can. Instead of putting it 
in a pie shell, grease a 2 qt round glass dish and
pour the mixture in. Cook at 325 º F, preferably in a
water bath. Serve with ice cream or whipped cream.

Day 3

Recipe: Louise’s Thanksgiving Turkey Soup

1 large onion, diced
bits and pieces of yesterday’s dinner such as, stuffing made with rice or bread cubes, green bean casserole, raw carrots, celery etc. from appetizers or relish trays, cooked sweet potatoes, mashed white potatoes, gravy.
3-4 cups turkey meat, torn or diced
If there’s not enough raw carrots or celery, dice some extra
If there’s no mashed potatoes (which was usually the case) dice a couple potatoes
If there’s not enough rice, measure out about 1/2 cup more (wild rice is great but only use 1/4 cup because it expands more.
1 package of frozen peas (about 1 1/2 cups)
2 quarts or more of homemade turkey stock (chilled overnight and fat removed)
2 Tablespoons cooking oil (usually olive)

In a large pot, heat the oil, cook onions until softened, add other raw diced vegetables. Stir and cook until all vegetables are partly cooked. Add turkey stock to a level 2 inches over the veggies. Bring to a boil, then reduce to a simmer. If adding extra rice or uncooked potatoes do that now. 

Let simmer for 10 minutes. Start adding cooked items. If you have green bean casserole, chop it up a bit. Cut up cooked potatoes or sweet potatoes to eating size chunks. Add more stock if necessary. Simmer 4 minutes.

Add turkey, stuffing, mashed potatoes and frozen peas at the end. Simmer another 10 minutes. 

Check for salt and pepper. Saltiness will vary drastically depending on what you have put in.

Serve with plenty of lightly buttered toast or if you have rolls left, split and toast those.

Day 4

Ham Salad

Glazed Baby Carrots

Ham Salad
A modern take on an Oldie but Goodie
2 cups finely diced cooked ham
1/2 garlic clove, grated
1 Tablespoon grated shallot (or sweet onion)
1 Tablespoon finely chopped fresh spinach or fresh parsley
2 teaspoon brown mustard
1/4 cup finely diced pickles (dill or bread and butter)
2 teaspoons pickle juice
1/2 cup mayonnaise 
2 teaspoons hot sauce, 
Dice the ham either by hand or in food processor. Place in a medium bowl
Add the rest of the ingredients. Mix thoroughly. Let sit in refrigerator for 1/2 hour before serving.
Make a sandwich, serve on crackers or devour with a spoon.
I added a couple of roasted sweet mini peppers, yum
Mix with egg yolk when making deviled eggs
Serve on a bed of lettuce with a sliced hard boiled egg on the side.

Honey Glazed Baby Carrots
Use Rainbow Carrots for maximum visual appeal. I’d use a little less butter and honey for this many carrots. Add flavor with spices like paprika, chili powder or cardamom.

A parfait is just  a layered ice cream sundae, generally served in a tall thin glass and topped with whipped cream.
