It’s a great time for oven fixin’s - warm up the insides of your house and you!

Only three weeks till Christmas. Do you have time to do everything you need to do? We will try to help you prepare for the food portion of the festivities, so you can have time for all the other traditions and fun.

Of course this means careful planning and preparing as much as possible in advance. Our next few columns will feature both recipes that can be prepared ahead of time, and quick and easy meal plans to keep you and your family well fed as the weeks rush by.

One relatively new piece of equipment may be quite helpful in this quest—the Instant Pot. I’m sure many of you already have one, but if not, maybe someone would like to give you an early Christmas present. This new stand alone pressure cooker with a sauté capability as well as slow cooker type settings can be a real time and energy saver. If you don't have one, put it on your Christmas list now, and we'll give you some recipes here to whet your appetite.

Recipe: Fruit Cups

Get plastic disposable cups. Like this:


Fill the cups with a mix of fresh fruit to about half an inch below the top of the cup. Bananas don’t work so well, but berries, oranges, pineapple, peaches, pears and grapes are all great. Cut it into bite-sized pieces if necessary. 

Pour juice over them, about half-way up. Orange juice works great, so does pineapple-orange. I’ve never tried apple juice, but presumably it would be ok.

Top off the juice with something fizzy. 7-Up, Ginger Ale, or Sparkling Ice - these all work great. If you want to use diet versions, that’s ok, too.

Put it in the freezer. It takes us about 4-5 hours for it to freeze solid. Then you can use them whenever you like. Take them out about 45 minutes in advance before eating. 

This is a great item to take to potlucks, too.
